Bok Choy

Bok choy is a cabbage or lettuce originating in China. It has a light sweet flavor and crisp texture. Many times a small handful of leaves are tossed into a soup to add the sweet flavor that offset the onions and mushrooms. They turn a dark vibrant green as well when boiled for just a moment and usually loose some of their crisp texture.

Mung Bean Sprouts

Mung bean sprouts are sprout of the mung bean. They are typically white and have a yellow edible seed on the end. They are very crisp and light with a mild sweet flavor. They add color and texture to many dishes and should be added near the end of cooking or they loose their light flavor and crisp texture.

Daikon/White Radish

Daikon is a white radish that has the shape of a carrot. It has a stronger flavor than round red radishes and is used in fresh dishes like salads. They are sliced thin and added to soups but loose some of their flavor to other flavors of the dish. Daikons are used more in Chinese cooking recipes than Japanese cuisine but still bring flavor to ramen dishes.

CHINESE VEGETARIAN NOODLES

1 1/2 tbsp minced garlic
1 tbsp minced fresh ginger (1 tsp ground ginger)
1 1/2 tbsp curry powder (or less to suit your taste)
1/4 cup vegetable broth
3 tbsp soy sauce
1/2 tsp sugar
3/4 tsp salt
1/4 tsp fresh ground black pepper
1 1/2 tbsp corn oil
1 red onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
4 cups thinly sliced cabbage
1/2 lb rice stick noodles (ethnic food section), softened in hot water and drained

Make a curry seasoning by mixing together the following:, garlic, ginger, curry powder; set aside.

Make a basic Chinese sauce by mixing together the vegetable broth, soy sauce, sugar, salt, pepper; set aside.

Heat a heavy skillet over high heat; add the oil and heat until hot, about 30 seconds. Add the curry seasoning and stir-fry until fragrant, about 10 seconds. Add the onion slices and stir-fry for a minute or until barely tender. Add the red and green peppers; stir-fry for another minute. Add the cabbage and cook for 2 or 3 minutes until everything is crisp tender. Add the Chinese sauce and the noodles. Carefully toss to mix. Cook, stirring, for 30 seconds. Best served hot.

2 1/2 lbs cooked russet potatoes
1 tablespoon butter or margarine
1 tablespoon vegetable oil
14 oz chicken broth
2 cups low fat milk
1 finely chopped onion
6 cups chopped green cabbage
8 oz cooked ham or bacon (or any other cooked meat)
2 peeled chopped carrots
Salt and black pepper, to taste
How to make it:

Put the butter or margarine and oil in a heavy pot over a moderate heat. Add the onions, carrots and cabbage and cook until they begin to soften, stirring sometimes. Chop the meat and add it to the pan.

Slice the potatoes, making some pieces tiny so they dissolve and thicken the soup and others larger so they add texture, and add them to the soup with the milk and some salt and pepper. Warm the soup through without allowing it to boil, then garnish it and serve.

Cabbage Soup Diet Recipes For Home Use

Place on the stove on high heat for at least 15 minutes. Your soup should come to a rolling boil, and then reduce the heat to low for 10 minutes.

For a broccoli variation in cabbage soup diet recipes, you will need a half of a head of cabbage, a yellow zucchini and a green zucchini, a green pepper, 2 mushrooms as well as 10 garlic cloves, 1 celery stalk, a carrot, 1 bunch of broccoli, a can of crushed tomatoes and a pack of onion or mushroom soup mix and one liter of water. Wash all of your vegetables under cold water, and then slice or dice into bite sized pieces. Add all ingredients into the pot and cover with water. Authentic Korean Soup Recipes

Koreans eat soup or stew for every meal, which means they have plenty of variety. A lot of the stews are hearty and spicy and the soups might be clear broth or miso-based. Korean bean sprout soup is refreshing and light. It is healthy because it is low in calories but high in vitamin C. Add some kochukara (Korean red pepper flakes) to liven it up if you like. The following soup recipe, which serves four, is supposedly good for colds and hangovers.

Bean Sprout Soup

What you will need:


6 cups water
3 cups bean sprouts
1 teaspoon salt
1 tablespoon sesame oil
2 minced cloves garlic
1 tablespoon red pepper flakes (optional)
2 tablespoons soy sauce
Chives or green onion, for garnish

How to make it:

Wash the bean sprouts and trim the roots. Saute the garlic in the sesame oil and soy sauce for a few minutes, then add the bean sprouts and water and bring the mixture to a boil. Turn the heat down to low and simmer the broth for half an hour. Add the red pepper five minutes before you take it off the heat. Stir in some chives or scallions and serve.

Korean Kimchi Soup

Another popular soup in Korea is this one and it is hot, spicy and the perfect winter warmer. You can adapt this recipe however you like. Adding mushrooms, zucchini, or potatoes works well. Kimchi is a traditional Korean dish made with seasonings and vegetables. There are many kinds but the most common ones are made with green onion, napa cabbage, cucumber, or radish. This is the most common side dish in the country too.

Kimchi from the north of the country are less spicy and less salty than their southern counterparts and they do not contain brined seafood. Southern style kimchi uses lots of chilies, salt, and seafood like fermented anchovy or brined shrimp.

This recipe also calls for gochujang, which is a hot pepper paste, and kochykaru, which is a red pepper powder. If you cannot find these in an Asian food store, you can use any kind of hot sauce and a regular chili powder instead.

This recipe serves four people. If you want to use beef, tenderloin is good. Alternatively, you can use a tougher cut like stewing beef and simmer the soup for a longer time. If you prefer pork, try bacon or belly pork.

What you will need:


2 cups roughly chopped napa cabbage kimchi
3/4 lb sliced pork or beef
1/2 chopped onion
3 cups water
1/2 cubed block tofu
1 tablespoon soy sauce
1 tablespoon kochukaru or red pepper flakes
1 tablespoon gochujang or hot sauce
2 chopped green onions
2 finely chopped cloves garlic
1 tablespoon sesame oil

How to make it:

Saute the meat in half the sesame oil for a few minutes. Add the kimchi and stir fry for five minutes. Add the rest of the oil, along with the onion, garlic, gochujang, and kochukara. Add the water and bring the broth to a boil, then turn down the heat and let it simmer. Cook for ten minutes. Add the tofu and cook for fifteen minutes more. Stir in the scallions and serve.

Lentil and Smoked Sausage Soup Recipe

Directions

Take a large stockpot or saucepan, put some oil in it, and heat it on medium flame. Add lentils, onion, garlic and cabbage; cook the vegetables until they become tender. Mix the tomatoes and sausage in those vegetables. Crush vegetable cubes on that mixture and pour in some water. Mix in thyme, cayenne pepper and bay leaf. Let the whole mixture boil; Put a lid to cover and let it simmer for about 30 minutes until lentils become tender. To season it, use pepper and salt to taste.

Serve it hot in beautiful serving bowls. Solid whole-grain bread seems just perfect alongside this soup. You can serve inexpensive red wines called Cotes-du-Rhone with the same spicy and earthy flavor to balance the taste of the dish. You can also use smoked turkey sausages. Ukrainian Red Borscht Soup Recipe

This classic beet soup recipe is a favorite among all the age groups. It is healthy and easy to cook. It only takes an hour to prepare the entire recipe, and serve it hot at your table. Here is the recipe - check it out!

Ingredients

1 package (16 ounce) pork sausage

3 medium peeled and shredded beets

3 peeled and shredded carrots,

3 medium peeled and cubed baking potatoes,

vegetable oil - 1 tablespoon

1 medium chopped onion

1 can (6 ounce) tomato paste

water - 3/4 cup

cored and shredded head cabbage - 1/2 medium

1 can (8 ounce) diced and drained tomatoes

3 cloves of minced garlic

salt and pepper - as required

white sugar to taste or 1 teaspoon

for topping - sour cream - 1/2 cup

chopped fresh parsley - 1 tablespoon to garnish

Directions

Crush the sausage into a deep large frying pan on medium-high heat. Cook the pieces by stirring it until it loses its pink color. Remove the pan from the heat and keep it aside.

Fill half of a big pot water (around 2 quarts), and let the water to boil. Add fried sausages, and cover the pot with a lid. Let it boil again. Add the beets in that mixture and cook until the beets lose their colors. Add the potatoes and carrots and cook for around 15 minutes until the vegetables become tender. Add the can of diced tomatoes and the cabbage to that mixture.

Heat the some oil in a large skillet on medium flame. Add the onion and cook until it becomes tender. Blend in the water and tomato paste and mix them well. Put the mixture to the pot. Add some raw garlic to the soup, put a cover and put off the heat. Let the taste blend in the soup for 5 minutes. Season with pepper, salt and sugar.

Serve it hot in soup bowls and garnish with fresh parsley and sour cream.

Serve it hot with fresh bread. If you like to make it vegetarian, then just omit the sausages and taste this delicious recipe. This wholesome meal is just perfect for a chilly winter.

The first thing I made was the Fettuccine Alfredo from Olive Garden. The fattening ingredients was a little scary, but it tasted great! I can't wait to try out some of the other recipes.

I'm planning on making my husband Applebee's baby back ribs. I am going to make the Double Tree Hotel Chocolate Chip Cookies for my son. They even have the Macaroni Salad recipe from KFC! How to make it:

Saute the garlic with the onions in a four quart pot, in the oil and butter. Keep stirring the mixture as it cooks, until the onions are brown. This should take about half an hour. Add the bouquet garnish and chicken broth and bring the garlic soup to a boil.

Add the bread and let the soup simmer for ten minutes, and then take the bouquet garni out. Puree the soup in batches in the blender or with a hand-held stick blender. Strain it through a strainer, then warm it back up on the stove and add some more chicken broth if it needs to be thinned down. Stir in the Half & Half and add salt and black pepper to taste.

Traditional Greek Recipes - Stuffed Cabbage Parcels

This dish is inspired by one of my favourite traditional Greek recipes, Dolmades (stuffed vine leaves). Here, I am using Savoy cabbage leaves as an alternative, mainly because they are easier to obtain than vine leaves. Savoy cabbage leaves are more robust than other leaves and less prone to splitting when cooked, which could lead to the filling leaking out.

Ingredients


1 Savoy cabbage
1lb/450g minced beef
1 onion
1 clove garlic
1oz/25g pine nuts
1 tablespoon olive oil
1 tablespoon tomato puree
grated juice and rind of 1 lemon
2 tablespoons plain flour
1/4 teaspoon ground cinnamon
8fl oz/225ml beef stock
salt and black pepper

Method


Peel and chop the garlic and onion.
Remove any unusable leaves from the cabbage and select 8 of the largest that remain
Cook the leaves in boiling water for 4 minutes until just softened - drain, rinse and dry with kitchen paper.
In a wok or pan, heat the oil and fry the garlic and onion for 3-4 minutes until softened.
Add the beef and cook for a further 5-6 minutes until browned.
Add the lemon rind, pine nuts, tomato puree and cinnamon.
Stir in the flour and cook, stirring continuously, for 1-2 minutes.
Stir the beef stock in gradually, until the mixture thickens.
Season with salt and black pepper. Cover and simmer for 15 minutes.
Remove from heat and allow to cool.
Spoon the mixture onto the 8 cabbage leaves. Roll up and pin the edges with cocktail sticks.
Half-fill a pan with water and lemon juice. Layer the cabbage parcels in a steamer attachment.
Cover and steam for 20 minutes, serve while hot.

How to Enjoy a Diet With Delicious Weight Loss Recipes

For most people the idea of a diet means to stop eating everything you like and start eating everything you don't. Even though this idea is changing, it is still the first thing that pops into someone's head when you mention a weight loss diet.

This idea that diet recipes have to taste bad to be good for you would have to be the biggest contributor to people giving up on their weight loss plan.

But you can lose weight and continue to enjoy your food. It's just a matter of recognizing the harmful ingredients in your diet and replacing them with a healthier alternative.

You can still have chocolate cake, it's not the cocoa in the recipe but the amount of sugar used that does the damage. Make sure you substitute a sweetener.

You don't have to eat a stick of celery instead of your usual snacks. If you used to snack on chips, try rice crackers instead. Or if you ate a lot of candy, try strawberries, blueberries or pineapple pieces.

So don't put off losing weight because you think all diets are celery and lettuce. With the right weight loss recipes you won't even know you are on a diet.
