A favorite Beet Relish Recipe

2 tablespoons chopped red onion
2 tablespoons red wine vinegar
1 teaspoon granulated sugar
2 tablespoons Dijon mustard
3 tablespoons vegetable oil
Add salt and pepper to taste

I usually start by combining all the ingredients listed above in a small bowland mix well, then I chill several hours before use. The recipe makes about two cups made of finished product and if stored in a refrigerator and ends a week.
